Ditch the ready-to-eat salad bags in the supermarket, and make a more colorful and tasty salad from fresh veggies and sweet fruits.
Salad is easy and quick to make, and this salad is perfect for the barbecue party, for a picnic in the park or as a healthy lunch or dinner.
Salads are also easy to make when you travel, all you need to make it is a knife and a bowl or a plastic bag to mix it. You can choose your ingredients from what is available at the local market.
In this salad I use one of my favorite fruit pomegranate, which gives crunch to the salad. I prefer the sweet type, but you also get the sour type of pomegranate.
Wash all the vegetables in cold water, and drain/dry them. Tear the salad, and cut the other vegetables. Cut the pomegranate in two, and separate the red seeds from the peel. Mix everything in a bowl. Add fresh coriander, salt and pepper to taste – and you are ready to eat!
If you want a more hearty salad, add some boiled pasta, beans or chick peas. A yoghurt sauce will also go well with it. Mix yoghurt (dairy or soy) with salt, pepper, a pinch of sugar and like juice, and add fresh coriander if you have some left.
